Just Panela Guava Lemon Strawberry Cheesecake
Ingredients:
Crust:
- ½ Cup Just Panela
- 1 1/2 Cup Gram cracker crumbs
- 5 Tbsp unsalted butter
- ½ Tsp salt
Filling:
- 1 ½ cup Just Panela
- 24 oz cream cheese
- 1/4 Cup heavy cream
- ¼ Cup lemon juice (1 or 2) Lemons
- 1 Tbsp grated lemon zest
- 4 Eggs
- 1/4 cup sour cream
- 2 tsp vanilla extract
Topping:
- 1 ½ cup Just Panela
- 2 Pounds Ripe Guavas
- 1 Pound Ripe Strawberries
- 1 Tsp grated lemon zest
Directions:
Make the crust:
1. Warm the butter, mix in salt.
2. Process/mix Just Panela and graham crackers together until consistent.
3. Slowly add the butter to the mixture while stirring.
4. Press into the bottom of a 9 inch spongiform pan, bake for 15 minutes on 325F.
5. Set aside, let cool.
Make the filling:
1. In a bowl mix the Just Panela with lemon juice.
2. In a food processor, beat the cream cheese, then slowly add the Just Panela/lemon mix.
3. Continue to mix, while adding the cream, eggs, sour cream, lemon zest, and vanilla.
4. Continue to beat until thoroughly mixed.
5. Pour into spongiform pan. Ensure spongiform pan is immersed in water (about halfway)
6. Bake at 325F for one hour.
7. Allow to cool in oven for one hour, remove from oven and allow to cool for two more hours
Make the topping:
1. Take the strawberries the guavas, cut off the ends and quarter them.
2. Put three quarters of the fruit on medium heat with a thick bottomed pan. Add the just Panela to the mixture. Save the other quarter of the fruit for later
3. Periodically push the fruit through a strainer to remove seeds.
4. Once the mixture is constant without chunks add the rest of the fruit.
5. Continue to stir until the large pieces of fruit get soft and start to dissolve.
6. Remove from heat allow to cool.
Put it all together:
1. Poor the topping on top of the cheesecake in the spongiform pan.
2. Leave in the refrigerator for at least 2 hours
